Chalona is a kind of cured meat. Originally made from alpaca, lamb is often used these days. It is salted and dried in the sun and out at night when it is much colder for as long as a month.
Chairo is a kind of soup made from a traditional type of freeze-dried potato, chillies, sweet potatoes, meat and chalona.
Ocopa is boiled and sliced potatoes covered in a chilli sauce, garnished with cheese, eggs, lettuce and olices. A herb used in the chilli sauce, tagetes minuta, gives it a distinctive green hue.
Copus inolves fried bananas, sweet potatoes and chicken, turkey goat and mutton.

Peruvian food is by necessity different up in the Andes, where a corn and potato based diet is supplemented with meats such as alpaca and guinea pig.
Pachamanca is a famous dish where the meat in question is marinated in spices and then baked with potato and perhaps a few vegetables. The earthenware pot is placed on hot coals and then buried under grass and soil for about an hour and a half, meaning it cooks very slowly.
Fried guinea pig is also popular and it is worth noting that guinea pigs can reach a much larger size than those considered pets in the UK.

Peruvian coastal cuisine is quite distinct, drawing on multiple influences. The Spanish influence is the most obvious, but Japanese, Chinese and African elements are also apparent.
Ceviche, a seafood dish, is incredibly popular and comes in many varieties. It is made of raw fish soaked in citrus juices and chilli, possibly with the addition of onion and seasonings. It is typically served with sweet potato. Chupe de camarones is a simple but popular dish. It is a thick shrimp stock soup with potatoes milk and chilli.
Around Lima, more meat is found, with meat turnovers, chilli chicken and cau cau, a kind of tripe stew, all available.

You tend to think of the mountains when you think of Peru. That or Paddington Bear. They’re what the nation is most famous for, but it has a great coastline as well.
Don’t be fooled by the cooler temperatures at altitude, Peru is a hot country at sea level with plenty of sunshine throughout the year. In fact, it is a desert climate right up to the coastline with virtually no rainfall.
It is warmest and driest in the south. Further north, you do get rain and it can also be uncomfortably hot in summer. Interestingly, there is a subtropical climate in the south despite it being situated in the tropics. This is because of the Humboldt ocean current, which brings colder waters from the south.

Holiday’s are getting more expensive every year. Although it seems like it is getting cheaper, Flights seems to be really cheap to Europe and other place in the world but if you go on one of them, your destination is going to be a rubbish one, similar or worse than that of your own town and won’t be a tourist attraction.
If you are going to go on a holiday then delay it a little bit more and spend a little more than £20 on a flight and plan it well as so to make sure you have a good destination.

Does leisure mean going abroad? In the minds of many people it does. This is a great misconception. People think that leisure and tourism is limited to places abroad to one’s country and think it’s quite lame to go down south or up north and elsewhere in your own country to enjoy some tourism.
You don’t need to go abroad and I say it again and again but most people just want to burn away a lot of hard earned cash just because they think they are not touring if they are still in the same country! How so wrong!

An holiday to the far east is different and a unique experience. If you haven’t been on holiday and a vacation to the far east to countries like Japan, China etc. then you’re missing big time. Many people from this country have been there and mentioned it’s no different to anywhere else – that’s because they kept their visit to the cities only. You need to go visit the villages and highlands and hard to reach areas which will definitely introduce you to a new experience and something unique to what you are used to in the UK and the US.

Do you really need a holiday once a year?
Lots of people who complain about finances seem to be able to go on holiday comfortably every year. They think they have to go and if they don’t their life will become miserable. Well let me tell you. You don’t need to go, it’s a want, not a need.
I know many people who haven’t been on holiday for years and there are many I work with also.
So if you are a person who thinks they need to go on holiday, think again and don’t complain! This said there are many good reasons also for wanting to go.

Winter is a good time to go on holiday. Loads of people will disagree with me on this one you are likely one of them. Why is the cold winter a good time?
- Flights are extremely cheap
- The holiday resort is not too busy
- A warmer and hot environment is more appreciated at the time
Yes there are many reasons why people don’t go and won’t agree with me. This is due to kids being at school, people being at work etc. and I’m sure there is something you can work out somewhere. Do your research and something will pop up.
