Chalona is a kind of cured meat. Originally made from alpaca, lamb is often used these days. It is salted and dried in the sun and out at night when it is much colder for as long as a month.

Chairo is a kind of soup made from a traditional type of freeze-dried potato, chillies, sweet potatoes, meat and chalona.

Ocopa is boiled and sliced potatoes covered in a chilli sauce, garnished with cheese, eggs, lettuce and olices. A herb used in the chilli sauce, tagetes minuta, gives it a distinctive green hue.

Copus inolves fried bananas, sweet potatoes and chicken, turkey goat and mutton.

Peruvian food is by necessity different up in the Andes, where a corn and potato based diet is supplemented with meats such as alpaca and guinea pig.

Pachamanca is a famous dish where the meat in question is marinated in spices and then baked with potato and perhaps a few vegetables. The earthenware pot is placed on hot coals and then buried under grass and soil for about an hour and a half, meaning it cooks very slowly.

Fried guinea pig is also popular and it is worth noting that guinea pigs can reach a much larger size than those considered pets in the UK.

Peruvian coastal cuisine is quite distinct, drawing on multiple influences. The Spanish influence is the most obvious, but Japanese, Chinese and African elements are also apparent.

Ceviche, a seafood dish, is incredibly popular and comes in many varieties. It is made of raw fish soaked in citrus juices and chilli, possibly with the addition of onion and seasonings. It is typically served with sweet potato. Chupe de camarones is a simple but popular dish. It is a thick shrimp stock soup with potatoes milk and chilli.

Around Lima, more meat is found, with meat turnovers, chilli chicken and cau cau, a kind of tripe stew, all available.

Interestingly, there is a subtropical climate in the south despite it being situated in the tropics. This is because of the Humboldt ocean current, which brings colder waters from the south.
